Cultural Background / Legends / Anecdotes
Jinggang Mountain has two treasures: a revolutionary history and beautiful forests. Spanning 800 li, Jinggang Mountain is renowned as the “Cradle of the Revolution” with its red heritage, and is also a world-famous natural oxygen bar and green treasure trove—an ocean of emerald bamboo. It produces a wide variety of delicious bamboo shoots, among which “smoked bamboo shoots” are the most representative gems of the bamboo groves, hailed as the “sea cucumber of the bamboo forest.” In the dense bamboo forests, tender and crisp bamboo shoots are gathered, their layers of husks peeled off, then boiled in the clear and sweet waters of Jinggang Mountain, instantly releasing a rich aroma. They are then slowly roasted over charcoal until dry, becoming dark brown bamboo shoot strips—these are the “smoked bamboo shoots.” This process is not only for easier storage and transport, but mainly because the resulting dried shoots develop a unique flavor that is truly unforgettable. When cooked with meat, the meat tastes richly delicious while the bamboo shoot flavor remains long-lasting. There are many ways to enjoy it: boiled smoked bamboo shoots, smoked bamboo shoots with streaky pork, smoked bamboo shoots stir-fried with cured meat, and more. Those who have tried it always come back for more. The popularity of smoked bamboo shoots isn’t just due to their “deliciousness”—“healthiness” is another reason: the rich dietary fiber in smoked bamboo shoots acts as an excellent “cleanser” for the human intestinal lining, serving as a top-notch “intestinal sweeper.” Regular consumption of smoked bamboo shoots can significantly reduce the incidence of gastrointestinal cancers. People also love smoked bamboo shoots for a third important reason: “nutrition.” They are rich in plant protein as well as essential nutrients and trace elements for the human body such as calcium, phosphorus, and iron, and also have high fiber content. Therefore, traditional Chinese medicine believes that spring bamboo shoots have the effects of “benefiting the nine orifices, promoting blood circulation, resolving phlegm, and relieving indigestion and bloating.” They help absorb fats, promote food fermentation, aid digestion and excretion, making smoked bamboo shoots especially beneficial for people with simple obesity.
