Ming Ginger is a famous local product of Zhangping. It is a type of preserved fruit made from ginger slices and sugar. Production began during the Qianlong reign of the Qing Dynasty and has a history of over 200 years. It is said that in the late 18th century, after tasting preserved ginger slices from many countries, the British Queen declared Zhangping Ming Ginger from China to be of the highest quality. Since then, Ming Ginger has entered international markets such as the UK.

Ming Ginger originally came from the Wukeng area on the outskirts of Zhangping. The soil there is mostly sandy loam—loose in texture, deep in layers, shady and damp, and well-drained, which is conducive to ginger growth. As a result, the ginger produced in this area has plump roots, high yield, and excellent quality. For production, ginger roots are usually harvested around White Dew, first washed, peeled, and sliced, then soaked in rice water before being mixed with white sugar and sun-dried. Zhangping Ming Ginger is snow-white and translucent, sweet with a mild spice, and crisp and tender in texture. It can be served as a premium tea snack or used medicinally. It helps warm the stomach, relieve nausea, moisten the lungs, soothe coughs, dissolve phlegm, and dispel cold, making it highly popular among locals. Overseas Chinese and compatriots in Hong Kong and Macau also regard it as an ideal gift for family and friends.
