Arrowroot Dumplings

Arrowroot dumplings are a local specialty snack from Shitai County. They have a sweet flavor and a chewy yet tender texture. These dumplings are made by mixing premium pork fat with white sugar, coating it in a layer of arrowroot powder, forming it into balls, and steaming them.

The method for making arrowroot dumplings is rather refined. First, the arrowroot powder is thoroughly stir-fried in a large iron wok until it becomes completely dry, fine, and lump-free. Then, ingredients such as pork (with a balanced ratio of fat to lean), dried tofu (preferably five-spice tofu), mushrooms, winter bamboo shoots, and dried shrimp are finely diced. These are mixed together with fine salt, MSG, and other seasonings, then combined with the arrowroot powder until evenly blended. Next, an appropriate amount of hot water is added, and the mixture is stirred into a thick paste. Small portions are then gently shaped into round balls and steamed over high heat until fully cooked, ready to be served. Their flavors are diverse—soft, fragrant, fresh, smooth, and pleasantly chewy. Some variations involve pan-frying the dumplings with scallions, garlic, and other seasonings in lard for an even richer, more tender taste.

In addition to arrowroot, bracken root can also be used to extract bracken starch, which can be prepared into dumplings using the same method. The resulting taste is similar to that of arrowroot dumplings—not only delicious but also a rare, natural green food. Sweet potato starch can also be used to make dumplings, though their flavor is slightly inferior.

Both arrowroot and bracken starch are commonly referred to as "longevity starch" among locals. They are highly nutritious, with many health benefits such as cooling the body, clearing heat, stimulating saliva production, quenching thirst, fighting bacteria, and detoxifying. They are considered premium health foods.
