The Layered Pot is a delicious dish from the Qimen mountainous area. Its ingredients mostly consist of rustic farmhouse fare, layered one by one in a large iron pot, then stewed over high heat until thoroughly cooked, and served steaming hot straight from the pot. Typically, the top layer is made of braised pork slices—thick, generous, rich but not greasy—surrounded by neatly arranged meatballs. Further down, you’ll find fried tofu, air-dried game, tender bamboo shoots, a variety of mountain vegetables, and usually at the very bottom, dried vegetables mixed with rice noodles—oily, rich, and hearty. Each layer is revealed as you eat, and every layer is different, with its own unique flavor. It’s both novel and tasty, with generous portions that make it not just a dish but also a filling meal.

It’s said that the origin of this dish is related to Zeng Guofan. Back in the day, when Zeng Guofan led the Xiang Army and was stationed in Qimen, they often marched and sometimes set up camp in remote wilderness areas. Out of necessity, they dug rows of stoves along the riverbanks, set up a line of pots, and threw whatever ingredients they had into one pot to cook together. This gave birth to this labor-saving, ingredient-efficient, yet uniquely flavorful famous dish. Later, the dish spread among the local people around Anling, and over time, it came to be known as the “Layered Pot.” Whether during festivals, weddings, or house-building celebrations, locals love to prepare this dish. Moreover, different regions and families may use varying ingredients, but all feature wild mountain delicacies and stay true to the rustic farmhouse style.
