Wucheng Tea-Flavored Dried Tofu is a protected geographical indication product.
A traditional specialty of Huizhou, originally produced in Longwan, Wucheng, Xiuning County. Longwan has long been an important town of Wucheng, serving as a bustling land-and-water dock along the Shuishi River. The thriving water transport industry promoted the development of the town’s food and service sectors, with tofu workshops scattered throughout the surrounding villages. Wucheng Tea-Flavored Dried Tofu gained widespread fame across Anhui, Zhejiang, Jiangxi, and cities such as Suzhou, Shanghai, and Hangzhou thanks to travelers passing through. This dried tofu is renowned for its premium ingredients, meticulous craftsmanship, and delicious color, aroma, and taste. The soybeans used must be from the current year's harvest—aged beans are strictly avoided. The soy sauce is either the raw soybean juice from Hongchang Sauce Workshop in the town or purchased from Chengdexin Sauce Workshop in Tunxi. Spices such as cinnamon, fennel, cloves, and rock sugar are all carefully selected, and only tea seed oil or small-ground sesame oil is used—rapeseed oil is generally not used. The production of Wucheng Tea-Flavored Dried Tofu involves multiple steps including soaking the beans, grinding them into pulp, forming the tofu, wrapping in cloth, pressing, and flavoring with brine—all carried out with fine craftsmanship. The finished product has a well-balanced saltiness, pure texture, delicious flavor, tender yet resilient chew, and rich nutrition. It is an ideal accompaniment to tea, a great pairing with alcohol, and a tasty treat suitable for both young and old. It is also convenient to carry while traveling, and makes a thoughtful small gift for family visits—simple yet meaningful, winning widespread popularity. (Huangshan)
