Wenzheng Mountain Bamboo Shoots is a traditional famous dish from the Huizhou region of Anhui Province, made by stewing bamboo shoots harvested from Wenzheng Mountain in She County.
In the traditional cooking method, cured meat is usually stewed together with the bamboo shoots, hence it is also called Cured Aroma Wenzheng Bamboo Shoots; later, ingredients such as sausages and shiitake mushrooms were added to enhance the flavor, leading to the name Two-Aroma Wenzheng Mountain Bamboo Shoots.
The Wenzheng Mountain Bamboo Shoots feature a red husk and white, tender flesh with a delicious taste. Enhanced with seasonings during the cooking process, the finished dish is crisp, tender, and tasty, with a mildly sweet bamboo flavor that is as appealing as freshly harvested shoots, whetting the appetite.
Dish History
Legend has it that during the Southern Song Dynasty, when Huizhou merchants began to rise and those from She County doing business in Hangzhou missed their hometown dearly, they often asked others to bring them fresh Wenzheng Mountain bamboo shoots to ease their homesickness and reminisce about their native land.
Family members would dig up the freshly sprouted spring bamboo shoots early in the morning. While traveling on the Xin’an River, they would peel off the shoots’ husks, slice them, and place them in an earthen pot. Adding river water, they would simmer the shoots over charcoal fire until reaching Hangzhou. Upon opening the pot, the shoots were found to be fragrant, crispy, and delicious—just as tasty as if they had been eaten fresh at home. This authentic folk Huizhou dish thus became a nostalgic delicacy associated with the Huizhou merchants.
