With over 30 stores in Japan, Tokyo’s tonkotsu ramen "Tetsu Men" launched its Asian new brand "Tetsu Men En" flagship store in Taipei on January 10.During the first five days of the opening, the first 50 customers each day can enjoy the signature Tetsu Men ramen (NT$170) for free.And anyone ordering from the tonkotsu ramen series (excluding ramen salad and oil-mixed noodles) gets NT$50 off.
"Tetsu Men," established in Tokyo in 2006, has taken Kyushu-style tonkotsu ramen to new heights. Over its 11 years in business, it has expanded to over 30 locations nationwide in Japan. The new overseas brand is named "Tetsu Men En," where the character "En" (緣) conveys good fortune and luck, expressing wishes that all visiting customers will encounter positive things.
The secret to "Tetsu Men's" delicious taste lies in its secret broth recipe: pork and chicken bones are simmered for over 10 hours, then vegetables and pork back fat are added, resulting in a rich yet refreshing tonkotsu flavor. Black sesame oil further enhances the depth and aroma. The handmade ultra-thin noodles are chewy and absorb the broth perfectly, with customizable firmness. The recommended way to eat Tetsu Men is to finish the noodles before the first bowl of soup cools or the noodles soften, then order an extra serving of noodles ("Tairyo") to make it the second bowl, adding free toppings from the table such as freshly ground sesame and pickled leaf mustard. Halfway through, add red ginger and garlic to transform the broth’s flavor, and finish by drinking the remaining soup.
"Tairyo" means "one more serving of noodles" — after finishing the first bowl’s noodles but keeping the broth, you add another serving of noodles. At "Tetsu Men En," this costs just NT$20, and for customers with bigger appetites, unlimited extra noodles are available for just NT$30. In addition to the signature "Tetsu Men" ramen, the store also offers popular authentic Japanese ramen varieties, including one of Hokkaido’s three famous ramens — "Hakodate Xi Ramen," "Hachioji Soy Sauce Ramen," as well as the healthy "Ramen Salad."
