Originally planted by the Romans, lavender was used in ancient Roman baths to fragrance clothes. Later, the lavender industry emerged in Provence, France during the Middle Ages, when the government also recognized the plant’s aromatic and medicinal properties. By the 19th century, the fragrance of lavender had been utilized in Grasse, the "center of the French perfume industry," leading to tremendous growth in lavender agriculture.

Lavender blooms in southern France at the end of May and is harvested in August.
