It’s cold winter again, the perfect season for hot pot. The renowned hot pot restaurant “Uncle’s Homemade Pickled Cabbage and Pork,” which gained fame thanks to former Taichung Mayor Hu Zhiqiang, has opened a branch on Fuxing North Road in Taipei. The boss, Nie Binwu from Shenyang in northeastern China, aims to bring the most authentic and delicious northeastern-style white hot pot to Taiwan. In addition to their signature pickled cabbage and pork hot pot, northern-style dumplings and braised dishes are also very popular with customers.

Pickled cabbage is the soul of the white hot pot. At Uncle’s Homemade Pickled Cabbage and Pork, the hot pot broth is simply made by boiling cabbage in water, yet it leaves people salivating and unforgettable. The restaurant’s pickled cabbage uses a family heirloom method known as the “ripe stacking method” for curing, naturally fermented with aged brine. The cabbage comes from imported Korean napa cabbage, which is blanched, cooled, then salted and mixed with rice wine before being placed in a vat to ferment. After 60 days, when the cabbage has softened through fermentation, it is removed, and the liquid in the vat is turned into aged brine. New cabbage is then added. The pickled cabbage cured using the ripe stacking method has a refreshing texture and a tanginess that makes your mouth water without being overpowering. It’s appetizing whether eaten on its own, used in the soup, or mixed with noodles. People just can’t stop eating bowl after bowl, thoroughly enjoying every bite.
Additionally, dipping sauces are the finishing touch that elevates the hot pot experience. For the pickled cabbage and pork hot pot, it’s recommended to pair it with the store’s special tofu paste, leek flower sauce, Laba vinegar, spicy sauce, and other condiments to add more layers of flavor.
