You’ve probably had thick and thin pizzas, but have you tried a square one? Starting April 7th, “Eat” restaurant at amba Taipei Ximending Yishè Hotel is introducing Detroit-style pizza (Detroit Pizza), the hottest trend in New York right now. Its rectangular shape breaks away from traditional pizza norms, featuring a crispy thin crust edge, soft dough, and generous fillings. At “Eat,” you can enjoy seven different specialty Detroit pizzas made to order, starting from NT$380.

▲ Pizza Name: Ximending Boys Club. This classic Detroit-style pizza is sprinkled with cheddar, mozzarella, and Parmesan on the crust, then loaded with Italian sausage, fennel sausage, ham, as well as green peppers, mushrooms, onions, and black olives to balance the rich meat flavors. After baking, it’s topped with a basil tomato sauce made from crushed Roma tomatoes, onions, garlic, tomato paste, and basil.

Originating from Detroit, the motor city, this pizza is baked in the rectangular trays originally used for packing auto parts, resulting in a square shape with a crispy edge. “Eat” has specially imported Detroit-style blue steel pans (8X10T), which are four times more expensive than regular pizza pans, along with pizza-specific ovens. The dough, after a second fermentation, is spread across the bottom of the pan, then topped with three kinds of cheese—cheddar, mozzarella, and Parmesan. After baking, a homemade sauce is poured on top, reversing the traditional Italian pizza sauce layering method.

From now until April 30th, enjoy the “Four-Person Sharing Meal” for NT$1590+10% (original price NT$1740+10%), which includes a feast of white wine cream steamed clams + tender grilled American asparagus, smoked salmon Caesar salad, Detroit-style Sicilian meatloaf spicy sausage pizza, squid and seafood spaghetti, and lemon soda.

▲ Spice Girls (pizza): This pizza is sprinkled with cheddar, mozzarella, and Parmesan on the dough, then layered with red chili, green chili, and pickled yellow chili for multi-level spiciness. After baking, it’s drizzled with olive oil and a garlic mayonnaise made with roasted garlic and paprika.

▲ Millionaire’s Truffle Mushroom: While traditional Detroit pizzas usually feature red sauce, this innovative version pairs a creamy white sauce with mushrooms. Three types of cheese are topped with shiitake, button mushrooms, king oyster mushrooms, and bacon, while truffle sauce adds aroma and texture. After baking, it’s finished with a luscious garlic-infused white cheese sauce.
