Ms. Zhou Suying confidently guarantees, "The beef we use is Taiwanese yellow cattle, which is perfect for stewing. For example, the red-braised beef you see elsewhere mostly uses imported beef, which doesn’t taste as good when stewed." In addition to the chewy beef offal, the gently simmered large pot of white broth is infused with the essence of the offal—"cow" flavor in full force. It’s refreshing without being greasy, and unlike red-braised dishes that use other seasonings. It’s recommended for those who enjoy the original taste of the broth.

Since braised pork belly rice is the signature dish, you must try a bowl. "Niu Ma Ma’s" 55-NT-dollar serving of braised pork belly rice looks no different from others: steamed white rice drizzled with braising sauce, two pieces of pork belly with equal parts fat and lean, plus pickled bamboo shoots tinted with the sauce. Take a bite of the pork belly—the fat part is springy but not mushy, the top layer of skin is chewy like jelly, while the lean part is tender and flavorful. Ms. Zhou confidently says, "These bamboo shoots are the proud work of relatives from the south, preserved using traditional methods—rubbed with a generous amount of salt, then pressed under heavy stones to draw out the moisture, just like the common practice in rural three-sided courtyard homes. It’s the most traditional yet most flavorful method." Though constantly soaked in the braising sauce, they’re not overly salty. Instead, they’re juicy with every bite—truly the boss’s proud bamboo shoots.
