Huashan Flight Kitchen has announced its 2025 Lunar New Year festive dishes, featuring 11 items themed around Hakka cuisine. In addition to the perennially popular limited-edition Dongpo pork, new dishes such as fragrant pepper duck and braised chicken with pork tripe have been added. It is expected that over 10,000 sets will be sold, with early-bird 30% discounts driving projected sales of NT$7 million. Huashan Flight Kitchen noted that its frozen set meals are packaged in specially designed aluminum foil, requiring no freezing and only reheating in hot water before serving. With just a few clicks, customers can easily enjoy a reunion feast.
Co-invested by China Airlines and the Swire Group, Huashan Flight Kitchen is not only renowned for its inflight catering but also extends its ground catering services to banquets, group meals, and Chinese and Western-style meal boxes. It has also expanded its sales channels online, launching the Huashan Gourmet website to sell pastries, cakes, bread, souvenirs, and frozen ready-to-cook traditional dishes.
Since launching its reunion dinner product line in 2011, Huashan Flight Kitchen has earned high praise from consumers for its great value. This year’s “Huashan Prosperity New Year Dishes,” themed around Hakka cuisine, feature a series of specially developed dishes infused with the creativity of its chefs, offering unique and delightful flavors.
Among the perennial bestsellers, Huashan’s top recommendation is the private-household-style Dongpo pork, with only 300 portions available this year. True to traditional methods, the dish avoids ordinary cotton strings and instead uses the labor-intensive technique of securing the pork with melon rind. Slow-simmered in soy sauce and wine over a low flame, the pork boasts a deep crimson sheen, tender texture, and rich taste without being greasy. The precise knife work gives it an almost artistic appearance—both delicious and visually pleasing. Due to the complexity of preparation and high failure rate, the dish is available in limited quantities, so eager diners should act fast.
Using clever culinary techniques, Huashan’s chefs have created the signature Hakka dish “Fragrant Pepper Duck.” Inspired by Singapore’s chili crab, the dish selects premium-quality Taiwan ducks and marinates them for six hours in a sauce made from ginger juice, garlic, green onions, red pepper Sichuan peppercorn oil, cinnamon sticks, and star anise. After careful massage to infuse the flavors, the duck is cold-fried for 5.5 minutes until golden, then combined with fresh white peppercorns and steamed for two hours until tender, sweet, and aromatic. The dish offers the rich fragrance of duck meat layered with complex spices—a chef’s top recommendation.
Originating from Guangdong, braised chicken with pork tripe soup is a classic Hakka dish used to welcome guests and was traditionally prepared only during Lunar New Year in Hakka villages. Huashan selects 2-kilogram, tender and juicy Ludao free-range chickens, along with thoroughly cleaned and blanched pork tripe, slow-cooked with Sichuan peppercorn, white peppercorn, and fragrant basil. The spicy and sweet aroma of the peppercorns and the refreshing scent of basil eliminate any meaty odors. The precious broth extracted from the Ludao chicken and pork tripe results in a warm and nourishing soup.
Other offerings include premium Buddha Jumps Over the Wall, red-braised beef trio, braised peanuts and pig trotters, tangerine-flavored chicken leg rolls, pickled vegetable hot pot, smoked chicken leg clay pots, Hakka stir-fried pork belly, and stewed chicken feet in soy sauce (3 portions), among others. Pre-orders begin December 15, with a 15% discount available for orders placed before January 31. Pickup is from January 15 to February 9.
