Pelosser's Self-Roasted Coffee Shop — Customizable Coffee for Guests to Freely Mix and Match

Pelosser Coffee Shop, which can be reached by walking about 500 meters from Exit 2 of Xiaonanmen Metro Station, moved here due to the expiration of its previous lease. This relocation also provided an opportunity to re-plan its operational direction, allowing us to witness the further evolution of a self-roasted coffee shop.

First is the brand-new store identity design, incorporating the concept of grid paper commonly found in Japanese stationery, seen in everything from business cards to menus and signage. I have to say, I absolutely love this design. As someone whose handwriting has always been a bit all over the place, the grid helps me find my direction again, and the size of each square is just right to fit a single hiragana character — perfect for learning Japanese.



Okay, a bit off-topic, but the partners at Pelosser Coffee, Gan Shier and Kang Kankan, are really working hard to run the shop. Their coffee roaster has advanced from one kilogram to three kilograms, and they’ve even successfully obtained SCAA cupping certification. The rest depends on how well regional customers take to the place, as the relocation was quite far, and some regulars weren’t able to follow along.

Though not a groundbreaking concept, Pelosser Café T2 makes it happen with some difficulty — letting guests freely choose how their coffee is made. For example, you can opt to use Ethiopian Natural Yirgacheffe and Sidamo beans to make a cappuccino, or choose between pour-over, siphon, French press, Americano, or iced drinks for your black coffee.

Especially when it comes to espresso extraction, they truly have something unique. Uncle Coffee highly recommends coming to Pelosser and ordering several espressos made from different beans — the flavors are clean, the acidity bright, and the body rich enough, all thanks to their skilled roasting techniques and perfect espresso machine extraction.
