In a small workshop nestled in an alley along Guangming Road in Sanchong, New Taipei City, a couple in their thirties—Mr. and Mrs. Jiang—are sweating alongside several middle-aged women, busily making all kinds of dumplings to fulfill a wall full of pre-holiday orders. At the site, trays upon trays of large, light-red-colored dumplings are stacked up. These are called “Sea Flavor Fresh Black Pork” dumplings, and each one is priced at exactly 25 New Taiwan dollars. Mrs. Jiang jokes, “Every first-time customer who hears the price of these seafood medley dumplings instinctively reacts, ‘That’s expensive!?’. But after seeing the fillings and tasting them, they always end up full of praise—and the number of returning customers placing repeat orders just keeps growing!”

In a small workshop nestled in an alley along Guangming Road in Sanchong, New Taipei City, a couple in their thirties—Mr. and Mrs. Jiang—are sweating alongside several middle-aged women, busily making all kinds of dumplings to fulfill a wall full of pre-holiday orders. At the site, trays upon trays of large, light-red-colored dumplings are stacked up. These are called “Sea Flavor Fresh Black Pork” dumplings, and each one is priced at exactly 25 New Taiwan dollars. Mrs. Jiang jokes, “Every first-time customer who hears the price of these seafood medley dumplings instinctively reacts, ‘That’s expensive!?’. But after seeing the fillings and tasting them, they always end up full of praise—and the number of returning customers placing repeat orders just keeps growing!”

The Jiang couple have a touching story of support: their ninety-year-old grandmother helped fund the freezer equipment to care for the younger generation, while the grandchildren showed filial piety by staying close to accompany her. This is reflected in the quality of their handmade frozen dumplings, where they insist on making the healthiest and most delicious ones possible. The tall and slim Mr. Jiang, dressed in an apron and with his mask off, said, “Our handmade dumplings must use top-tier ingredients, safe materials, and be healthy and delicious!”

He pointed to the plates of light-red “Sea Flavor Fresh Black Pork” dumplings on the shelves and noted that the healthy red dough wraps around a whole, freshly shelled large grass shrimp, along with sea bass from Hualien, 3A-grade deep-sea squid pieces, Hokkaido Grade L scallop strips, sweet and crisp bottle gourd, and freshly slaughtered black pork. Each big dumpling is packed with premium seafood fillings. The taste is refreshing and elegant, with a rich combination of textures from different ingredients, leaving most customers instantly addicted.

With the pre-holiday ordering volume surging ahead of the Year of the Horse, a pack of 15 “Sea Flavor Fresh Black Pork” dumplings priced at 375 NT dollars is the most expensive item in the store, yet it is also one of the bestsellers. The Jiang couple works tirelessly through weekends and holidays, but despite their commitment to quality and limited help, supply still can’t keep up with demand.

“Making dumplings isn’t about customers—it’s about friends. Welcome to become our friends, and we’ll treat you like family!” Busy as she is, Mrs. Jiang never stops smiling. She says that currently, their handmade offerings include about 20 products such as the signature Seafood Series, Low-Calorie Slimming Chicken Series, Authentic Black Pork Series, Wonton and Dumpling Series, and Health Vegetables Series. These range from 4-NT-dollar small meat wontons to 25-NT-dollar “Sea Flavor” dumplings, covering everything from traditional northern-style authentic dumplings to modern creative ones made with local and healthy ingredients.

All products from Ding Wei Zhi Jiao are free from monosodium glutamate, emphasizing the natural flavor of the ingredients. Vegetables are rinsed with RO reverse osmosis water before final washing, and the entire process is carried out at room temperature below 18 degrees Celsius, handmade. They are then quickly frozen and sealed to ensure food safety and deliciousness. Mrs. Jiang emphasized that, with the trend toward health and food safety, the sales of various types of dumplings and wontons are getting better and better. She once again expressed her gratitude for the support and love from the grandmother and all the customers.
