I made whole tomato rice on Sunday, and just one day later I wanted to make it again because it’s honestly so much fun. One-pot lazy meals rarely come with such an entertaining twist, and you can even create tons of flavor variations. Today at noon, I used some pantry staples at home to whip up an even more satisfying version—“Whole Tomato Rice with Silky Egg & Curry Flavor.” It was absolutely delicious—you all have to give it a try. How about making a pot tonight and seeing for yourself?

Don’t worry, this variation is super simple—all you need are the following common household ingredients.

Whole Tomato Rice with Silky Egg & Curry Flavor (Serves 2–3)

Ingredients
Rice 1 cup
Tomato 1 (about the size of a tennis ball)
Chicken 100g
Curry block 1 (either sweet or spicy flavor—your choice)
Milk 200ml (you can substitute with water if no milk is available)
Butter 5g (can be replaced with olive oil or other fats)
Salt 1/4 tsp
Egg 1

*For 2 cups of rice, add 1 more tomato, and double the curry block, milk, butter, and salt (adjust chicken quantity as desired), and so on.

Instructions
1. Rinse the rice and place it in the rice cooker. Add the milk and salt.
2. Add the chicken, curry block, and butter.
3. In the center, place a tomato with its stem end cut in a cross and the top scooped out, then cook in the rice cooker.
4. Once the rice is cooked, let it steam for 5–10 minutes before opening the lid. Mash the tomato while it’s still hot, mix it well with the rice, and it’s done.

*If the curry block and milk look clumped when you open the cooker, don’t worry—just stir well until everything is evenly distributed.

It’s insanely easy, and your kitchen will be filled with the lovely aroma of curry while it cooks.

While the cooked rice is steaming, let’s make the silky egg side dish.

It’s super easy—just whisk 1 egg in a bowl with a bit of water and salt (you can also add a little cheese powder), heat oil in a pan over medium heat, pour in the egg mixture, and stir gently with a spatula once the edges start to set. Turn off the heat after 3–5 seconds and serve.

Place the silky egg next to the curry tomato rice, doesn’t it instantly feel heartier and more luxurious? It’s practically a complete meal on its own.

With its appetizing, rich curry aroma yet not the least bit greasy, this whole tomato rice is so delicious you’ll want to keep eating bite after bite—and pairing it with silky egg makes it nothing short of heavenly.

Though the whole tomato rice is basically a super simple dish, here are a few pro tips to make it even tastier:
'About the Water Amount
If you want a texture similar to risotto, use the same amount of water as you normally would for cooking rice — you can even replace the water with fresh milk for a better taste. If you prefer a texture closer to fried rice, reduce the water by about 2–4 tablespoons and add a bit more oil.
'Can I use other types of oil besides olive oil and butter?
Yes, but it's recommended to use olive oil or butter as the main choices.
'How much tomato should I use?
It’s recommended to use 1 cup of rice : 1 tomato. Here, the size of the tomato is roughly equivalent to a tennis ball.
'What if I don’t like tomato skin?
When the rice cooker is opened, quickly peel off the broken tomato skins, then put the tomatoes back in and mix them with the rice.
'Are there any restrictions on the type of pot used?
No restrictions. In addition to electric rice cookers, you can also use clay pots, Tatung rice cookers, cast iron pots, smart multi-cookers, etc. Taking the commonly used Tatung rice cooker as an example: for the inner pot, use one cup of water for one cup of rice, and for the outer pot, use one cup of water (though this may vary depending on the type of rice — please refer to the package recommendations).
'Seasoning suggestions
Basil (or Thai basil), cheese powder (or freshly grated cheese), black pepper, and garlic slices are the most suitable. Adjust according to your personal taste.
'Other flavor suggestions
Combo 1. Tomato + onion + asparagus + ham (or bacon)
Combo 2. Tomato + mushrooms + chicken + fresh milk + cilantro
Combo 3. Tomato + celery + fresh shiitake mushrooms + lean pork loin
Combo 4. Tomato + scallops + clams
Combo 5. Tomato + garlic + Thai basil + chicken stock

Simple, fun, healthy, and endlessly versatile — tomato rice isn’t just for home cooking. You can also make it in the office if there’s a simple kitchen area available. When you’re busy and want a quick, easy meal without too much fuss, give whole tomato rice a try, hey!
