Michelin-starred chefs always stir up buzz. Mandarin Oriental Taipei has invited Chef Oliver Dabbous of Dabbous, one of “London’s hardest-to-book restaurants,” to make a guest appearance from August 26 to 29, along with the restaurant’s head bartender, Oskar Kinberg.

Located in London, UK, Dabbous is one of the hottest topics in British dining circles in recent years. Young chef Oliver Dabbous (also known as Ollie Dabbous) is known for his unique creativity, and his restaurant has been hailed by The New York Times as one of the hardest-to-book spots in London. Opened in London in 2012, Dabbous was voted “Best Kitchen” by the UK Tatler Restaurant Awards in its first year. In 2013, it ranked 11th on the Top100 Restaurants list and was awarded one Michelin star the same year.

Now 34, Oliver Dabbous sports a full beard that gives off a rugged first impression, but those who have tasted his cuisine can feel his meticulous and focused approach. At just 16, he walked into London’s Rowley Leigh restaurant and asked for a job, determined to become a top chef. Later, through his father’s introduction, he worked at Paris’s three-Michelin-starred Guy Savoy, putting in 12-hour workdays. Oskar Kinberg, now 30, is one of the most sought-after bartenders in the UK, crafting cocktails with a unique magic that leaves guests with an unprecedented sense of wonder.

1. “Oliver Dabbous British Evening Dinner” — August 26 to 29 (Wednesday to Saturday): A nine-course evening set menu prepared by Oliver Dabbous, paired with selected wines and special creations by Oskar Kinberg, NT$15,000 per person.

2. “Oliver Dabbous British Luncheon” — August 28 and 29 (Friday and Saturday): A six-course lunch set menu paired with selected wines and special creations by Oskar Kinberg, NT$8,500 per person.
