Huang Ji Huang Three-Sauce Braised Pot is one of Beijing’s top ten famous hot pot restaurants, with nearly 600 branches currently. In addition to being spread across various cities and counties in mainland China, it also has locations in Hong Kong, Thailand, Canada, Australia, and Indonesia. Huang Ji Huang Three-Sauce Braised Pot is an evolved version of the Qing Dynasty delicacy Spicy Fish in Sauce. It is made without adding a single drop of water during the cooking process—earning it the nickname “hot pot without soup.” The dish utilizes the moisture from ten types of base vegetables, adopts a “braising” cooking method, combines a variety of main ingredients, and is finished with a hand-mixed secret sauce, involving as many as 14 intricate steps.
