Soka City

Soka City is a city in Saitama Prefecture, Japan, located near the southeastern part of the prefecture. It was officially designated as a Special City on April 1, 2004. Situated in a basin, the area was once an agricultural region surrounded by forests and clear waters. Although industrialization has impacted the forests and water bodies, the local government is now committed to creating a green city that reflects the changes of the four seasons.

In most parts of Japan, when people hear "Soka," they immediately think of senbei (rice crackers), and vice versa. There are no detailed records of when Soka senbei first originated. According to the "Manwagi Kaki Chō" (A Record of Celebratory Occasions), a document from the eighth year of the Kansei era (1796) preserved by the Fujinami family in Aoyagi-cho, Soka City, there is the earliest known mention of senbei in the city. However, there are still no detailed accounts of its origins, leading to several legends about how Soka senbei came to be. One of the most representative stories is that after the establishment of Soka-juku (a post station), many teahouses opened, and one teahouse had an elderly woman who also sold dango (sweet rice dumplings). She often ended up throwing away unsold dango, so someone suggested she flatten them, dry them in the sun, and then roast them to sell as a type of baked snack. These snacks, derived from dango, eventually became a specialty of Soka-juku and developed into what is now known as Soka senbei.
